Barley and Bean Salad

- 1 cup raw barley rinsed and cooked
- 1 15 ounce can small white beans rinsed and drained or any other beans
- 1 15 ounce can chickpeas rinsed and drained
- 1 medium cucumber peeled seeded and chopped
- 1/4 cup minced red onion
- 1/2 cup chopped red bell pepper
- 1 medium carrot shredded
- 2 tablespoons fresh parsley minced
- 1/2 cup prepared Italian dressing I used Good Seasons
Steps:
- Mix all together in medium bowl Serve Refrigerate leftovers
