Buckwheat Noodles with Mushroom Sauce

- 12 ounces buckwheat noodles
- 2 tablespoons butter or 2 tablespoons margarine
- 1/2 lb mushroom finely chopped
- salt and pepper
- 2/3 cup low-fat yogurt
- 1 tablespoon soy sauce
Steps:
- Pour boiling water over noodles cover let stand 8 minutes then drain
- Melt butter in skillet and add mushrooms and saute 5 minutes
- Season with salt and pepper
- Stir in yogurt and soy sauce
- Pour sauce over noodles and serve
