Sauteed Zucchini With Garlic, Chili and Basil

- 3 large zucchini
- 2 tablespoons olive oil
- 3 clove garlic finely chopped
- 1 red chili pepper deseeded and finely chopped
- 12 leaves basil finely sliced
- salt and freshly ground black pepper
- 4 tablespoons parmesan cheese freshly grated
Steps:
- Cut the zucchini into slices at a slight angle
- Heat the olive oil in a large frying pan and fry the zucchini slices for about 2 minutes
- Add the garlic and chili and fry a further minute
- Sprinkle in the basil season well with salt and freshly ground black pepper
- Transfer the zucchini to a warmed serving dish and scatter over the grated Parmesan Serve immediately
